Description

Crispy and delicious, these Air Fryer Zucchini Chips are a healthy and easy-to-make snack or side dish. With just a few simple ingredients, you can enjoy a guilt-free, flavorful treat that’s perfect for any occasion.

Ingredients

2 medium zucchinis, thinly sliced

1/2 cup all-purpose flour

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 cup panko breadcrumbs

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Cooking spray

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a shallow bowl, mix the flour, salt, and black pepper.
  3. In a second shallow bowl, beat the eggs.
  4. In a third shallow bowl, combine the panko breadcrumbs, Parmesan cheese, and Italian seasoning.
  5. Dredge each zucchini slice in the flour mixture, shaking off any excess. Dip into the beaten eggs, then coat with the breadcrumb mixture, pressing lightly to adhere.
  6. Place the coated zucchini slices in a single layer in the air fryer basket. Lightly spray with cooking spray.
  7. Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  8. Remove from the air fryer and let cool slightly before serving.

Notes

For best results, slice the zucchini thinly and evenly.

Avoid overcrowding the air fryer basket to ensure even cooking and crispiness.

Serve with your favorite dipping sauces for added flavor.
