Description

Ingredients

2 medium zucchini

½ cup all-purpose flour

2 large eggs

1 cup Panko breadcrumbs

½ cup grated Parmesan cheese

1 tablespoon Italian seasoning

2 teaspoons garlic powder

½ teaspoon salt

¼ teaspoon black pepper

Olive oil spray


Instructions

  1. Trim the zucchini ends and cut them into ½-inch sticks.
  2. Set up three shallow dishes: one with flour, one with beaten eggs, and one with Panko, Parmesan, Italian seasoning, garlic powder, salt, and pepper.
  3. Coat each zucchini stick in flour, dip in eggs, and roll in the breadcrumb mixture, pressing to adhere.
