Ingredients

1 lb bacon, diced

1 medium onion, diced

6 large eggs

4 cups frozen shredded hash browns, thawed

2 cups shredded cheddar cheese

1 1/2 cups cottage cheese

1 1/4 cups shredded Swiss cheese

Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and drain on paper towels.
  3. In the same skillet, cook the diced onion in the bacon drippings until soft and translucent, about 5 minutes.
  4. In a large bowl, whisk together the eggs. Stir in the thawed hash browns, cheddar cheese, cottage cheese, Swiss cheese, cooked bacon, and sautéed onions. Season with salt and pepper.
