Ingredients
1 ¾ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda

½ cup unsalted butter, softened
½ cup granulated sugar
¼ cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
¾ cup apple butter
⅓ cup milk
Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Mix in the apple butter until fully incorporated.
- Gradually add the dry ingredients in three parts, alternating with the milk, starting and ending with the dry mixture. Mix until just combined.
- Divide the batter evenly among the muffin cups, filling each about ⅔ full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
