Ingredients

1 ¾ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

½ cup unsalted butter, softened

½ cup granulated sugar

¼ cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

¾ cup apple butter

⅓ cup milk


Instructions

  1. Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Mix in the apple butter until fully incorporated.
  6. Gradually add the dry ingredients in three parts, alternating with the milk, starting and ending with the dry mixture. Mix until just combined.
  7. Divide the batter evenly among the muffin cups, filling each about ⅔ full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Add ½ cup chopped walnuts or raisins for texture.
