Ingredients
1/2 cup unsalted butter, softened
1/2 cup apple butter
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/4 cup sugar (for rolling)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, cream together softened butter, apple butter, and sugar until light and fluffy (about 2 minutes).
- Add the egg and vanilla extract, mixing until fully combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined.
- Mix 1/4 cup sugar with 1 teaspoon cinnamon in a small bowl.
- Roll dough into 1-inch balls, then roll each ball in the cinnamon-sugar mixture.
- Place dough balls on the baking sheet, spacing them 2 inches apart.
- Bake for 8-10 minutes or until edges are golden brown. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, add chopped dried apples or a handful of white chocolate chips.
