Ingredients

1 cup rolled oats

3/4 cup whole wheat flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsweetened applesauce

1/4 cup coconut oil, melted

1/2 cup brown sugar, packed

1 teaspoon vanilla extract

1/2 cup raisins

1/2 cup diced fresh apple (peeled and finely chopped)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix rolled oats, whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk applesauce, melted coconut oil, brown sugar, and vanilla until smooth.
  4. Combine wet and dry ingredients, stirring until just mixed.
  5. Gently fold in raisins and diced apple.
  6. Scoop tablespoons of dough onto the prepared baking sheet, spacing 2 inches apart. Flatten slightly.
  7. Bake for 12-14 minutes, or until edges are golden.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a nutty version, add 1/4 cup chopped walnuts or pecans.
