Ingredients
1 cup rolled oats
3/4 cup whole wheat flour
1/2 teaspoon baking soda

1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup unsweetened applesauce
1/4 cup coconut oil, melted
1/2 cup brown sugar, packed
1 teaspoon vanilla extract
1/2 cup raisins
1/2 cup diced fresh apple (peeled and finely chopped)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix rolled oats, whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk applesauce, melted coconut oil, brown sugar, and vanilla until smooth.
- Combine wet and dry ingredients, stirring until just mixed.
- Gently fold in raisins and diced apple.
- Scoop tablespoons of dough onto the prepared baking sheet, spacing 2 inches apart. Flatten slightly.
- Bake for 12-14 minutes, or until edges are golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
