Ingredients

For the Apple Filling:

3 medium apples, peeled, cored, and diced

2 tablespoons granulated sugar

1 tablespoon brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

For the Crisp Topping:

½ cup old-fashioned rolled oats

½ cup all-purpose flour

¼ cup brown sugar, packed

¼ teaspoon ground cinnamon

¼ cup unsalted butter, melted

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
  2. Prepare the Apple Filling: In a medium bowl, toss the diced apples with granulated sugar, brown sugar, ground cinnamon, and lemon juice. Set aside.
  3. Make the Crisp Topping: In another bowl, mix the oats, flour, brown sugar, and cinnamon. Stir in the melted butter until the mixture is crumbly.
  4. Assemble the Bites: Spoon the apple mixture into the mini muffin cups, filling each about ¾ full. Top with a spoonful of the oat crumble mixture.
  5. Bake: Bake for 15-18 minutes, or until the tops are golden brown and the apples are tender. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  6. Serve: Enjoy warm or at room temperature. Optionally, serve with whipped cream or vanilla ice cream.

Notes

For a gluten-free version, use gluten-free flour and oats.

You can freeze these bites for up to 3 months. Reheat in the oven before serving.
