Ingredients

For the French Toast Roll-Ups:

1012 slices of toast bread

4 oz cream cheese, room temperature

1/3 cup sugar

1 tsp ground cinnamon

2 eggs

3 tbsp milk

2 tbsp butter for cooking (more if necessary)

For the Homemade Apple Filling Option:

2 tbsp butter

34 medium apples, peeled, cored, and diced into 1/4-inch cubes

1/3 cup brown sugar

3 tbsp water

1 tsp cinnamon

1/8 tsp nutmeg

1 tbsp + 1 tsp cornstarch

2 tbsp water

For the Canned Apple Filling Option:

1 can apple pie filling


Instructions

  1. Prepare Homemade Apple Filling (if using):
    • Melt 2 tbsp butter in a saucepan over medium heat. Add diced apples and cook until softened, about 3-4 minutes.
    • Stir in brown sugar, 3 tbsp water, cinnamon, and nutmeg. Cook until apples are tender and mixture thickens, about 5-7 minutes.
    • Mix cornstarch with 2 tbsp water to create a slurry. Stir into the apple mixture and cook for an additional 2 minutes until thickened. Set aside to cool.
  2. Assemble French Toast Roll-Ups:
    • Flatten each slice of bread with a rolling pin.
    • Combine cream cheese, 1/3 cup sugar, and 1 tsp cinnamon in a bowl until smooth. Spread a spoonful of cream cheese mixture onto each slice of bread.
    • If using homemade apple filling, spoon a small amount on top of the cream cheese.
    • Roll up each bread slice tightly.
  3. Cook Roll-Ups:
    • In a shallow bowl, whisk eggs and 3 tbsp milk. Dip each roll-up into the egg mixture, coating all sides.
    • Melt 2 tbsp butter in a skillet over medium heat. Cook roll-ups until golden brown on all sides, about 2-3 minutes per side. Add more butter if needed.
    • Let cool for a minute and roll in a mixture of 1/3 cup sugar and 1 tsp cinnamon while still warm.
  4. Using Canned Apple Pie Filling:
    • Warm the canned apple pie filling slightly in the microwave. Use as directed.
