Ingredients

1 cup oat flour (or blended oats)

1/2 cup vanilla protein powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup unsweetened applesauce

1/2 cup Greek yogurt

2 large eggs

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

1 medium apple, peeled and finely diced


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with muffin liners or lightly spray with non-stick cooking spray.
  2. In a medium bowl, whisk together the oat flour, protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, whisk together the applesauce, Greek yogurt, eggs, maple syrup (or honey), and vanilla extract until smooth.
