Instructions

  1. Preheat & Prep: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. Cream Butter & Sugar: In a large bowl, beat butter and brown sugar until light and fluffy.
  4. Add Wet Ingredients: Mix in the eggs one at a time, then stir in vanilla extract, mashed bananas, and sour cream (or Greek yogurt) until fully incorporated.
  5. Combine Wet & Dry: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Gently fold in the chopped pecans.
  6. Bake: Divide the batter evenly among the cupcake liners, filling each about ¾ full. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Make the Frosting: Beat cream cheese and butter together until smooth. Gradually mix in powdered sugar, vanilla extract, and cinnamon (if using).
