Ingredients
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can corn, drained
2 cups red enchilada sauce
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
8–10 small corn tortillas
2 cups shredded Mexican blend cheese or cheddar cheese
Fresh cilantro, chopped, for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet, cook ground beef over medium heat until browned, breaking it into small pieces. Drain excess fat.
- Add chopped onion and minced garlic to the beef. Sauté for 3-4 minutes until onion is translucent.
- Stir in black beans, corn, chili powder, cumin, salt, and pepper. Add 1/2 cup enchilada sauce and mix well. Remove from heat.
- Spread a thin layer of enchilada sauce in the bottom of the baking dish. Layer corn tortillas over the sauce, tearing as needed to fit.
- Spoon half of the beef mixture over tortillas, followed by a sprinkle of cheese. Add another layer of tortillas and spread half of the remaining enchilada sauce over the tortillas.
- Repeat the layering process, ending with tortillas and the remaining enchilada sauce. Top with the remaining cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly.
- Let casserole rest for 5-10 minutes, then garnish with cilantro before serving.
Notes
For a spicier casserole, add diced jalapeños or use a spicy enchilada sauce.
You can make the casserole ahead of time by assembling it and refrigerating it for up to 24 hours before baking.
Substitute ground beef with ground turkey or a vegetarian protein for a different version of this casserole.
