Ingredients
For the Beef Tips:
2 lbs beef tips (or stew meat)
2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
3 cups beef broth
1/4 cup Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon smoked paprika (optional)
Salt and black pepper, to taste
1/4 cup all-purpose flour
2 tablespoons cold water
For the Rice:
2 cups long-grain white rice
4 cups water or beef broth
1 tablespoon butter
Pinch of salt

- Prepare the Beef Tips:
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season beef tips with salt and pepper. Brown in batches, then set aside. - Sauté the Aromatics:
Sauté onions and garlic in the same pan until onions are soft and translucent, about 3-5 minutes. - Build the Gravy:
Return beef tips to the pan. Add beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, and smoked paprika (if using). Stir, bring to a boil, reduce heat, cover, and simmer for 1.5-2 hours. - Thicken the Gravy:
Combine flour and cold water to form a slurry. Stir into the simmering beef mixture. Cook for 5-10 minutes, until the gravy thickens. Adjust seasoning. - Cook the Rice:
While beef simmers, boil water or broth in a saucepan. Add rice, butter, and salt. Cover, reduce heat, and cook for 15-18 minutes. Fluff with a fork. - Serve:
Spoon beef tips and gravy over a bed of rice. Garnish with parsley if desired.
Notes
Add mushrooms, carrots, or peas for extra flavor.
Use a slow cooker by transferring ingredients (excluding slurry) and cooking on low for 6-8 hours. Add slurry during the last 30 minutes.
Substitute mashed potatoes or egg noodles for the rice.
