Description

Soft and chewy oatmeal raisin cookies are packed with hearty oats, sweet raisins, and warm cinnamon, making them a comforting treat for any occasion. Perfect for snacks, desserts, or breakfast indulgence, this easy recipe is a crowd-pleaser.

Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

3 cups old-fashioned oats

1 cup raisins

1/2 cup chopped walnuts (optional)

Instructions

  1. Prepare the Dough: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  2. Mix Dry Ingredients: In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually mix the dry ingredients into the wet mixture until just combined.
  3. Incorporate Oats and Raisins: Stir in oats, raisins, and optional walnuts.
  4. Shape and Bake: Scoop tablespoon-sized portions of dough onto baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes until edges are golden. Cool on sheets for 5 minutes before transferring to a wire rack.

Notes

Chill the dough for 30 minutes if cookies spread too much.

Store in an airtight container for up to 5 days or freeze for up to 3 months.
