½ cup all-purpose flour
¼ cup granulated sugar
¼ cup brown sugar
1 tsp cinnamon
¼ cup cold butter, cubed
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and spices.
- In a large bowl, mix the pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- For the streusel, combine flour, sugars, and cinnamon, then cut in the cold butter until crumbly.
- Fill muffin cups ¾ full with batter, then sprinkle the streusel on top.
- Bake for 18-22 minutes or until a toothpick comes out clean.
