Ingredients

1/4 cup brown sugar
1 large egg
1 tsp vanilla extract
Black gel food coloring (optional)

4 oz cream cheese, softened
1/4 cup powdered sugar
1/2 tsp vanilla extract
Instructions
- Prepare the Cheesecake Filling: In a small bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Refrigerate for 30 minutes.
- Make the Cookie Dough: In a medium bowl, whisk flour, cocoa powder, baking soda, and salt. In a large bowl, cream butter, granulated sugar, and brown sugar until fluffy. Add egg, vanilla, and food coloring (if using), mixing well. Gradually add dry ingredients until a soft dough forms.
- Assemble the Cookies: Preheat oven to 350°F (175°C) and line a baking sheet with parchment. Scoop 1 tablespoon of dough, flatten it, and place 1/2 teaspoon of cheesecake filling in the center. Seal the edges and repeat.
- Bake: Place filled cookie dough balls on the baking sheet, 2 inches apart. Bake for 10-12 minutes until edges are set. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
