Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

For the Cinnamon Swirl:

1/4 cup unsalted butter, melted

1/4 cup brown sugar, packed

1 tablespoon ground cinnamon

For the Glaze:

1 cup powdered sugar

12 tablespoons milk

1/2 teaspoon vanilla extract


Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Prepare the Crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom of the pan. Bake for 8-10 minutes until lightly golden. Set aside to cool.
  3. Make the Cheesecake Layer: In a blender or food processor, blend softened cream cheese, granulated sugar, eggs, vanilla extract, and ground cinnamon until smooth. Pour over the cooled crust, spreading evenly.
  4. Add the Cinnamon Swirl: Mix melted butter, brown sugar, and ground cinnamon. Drizzle over the cheesecake layer and swirl with a knife or toothpick.
  5. Bake: Bake for 30-35 minutes, or until set and edges are lightly browned. Cool completely in the pan.
  6. Prepare the Glaze: Whisk together powdered sugar, milk, and vanilla extract. Drizzle over cooled bars.
  7. Serve: Lift out using the parchment overhang, cut into squares, and enjoy.
