Ingredients

1 ¾ cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

4 ounces cream cheese, softened

½ cup powdered sugar

½ cup fresh blueberries

1 tablespoon cornstarch


Instructions

  1. In a small bowl, toss the blueberries with cornstarch and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the mixture, beating until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In a separate bowl, mix the cream cheese and powdered sugar until smooth and creamy.
  7. Gently fold the blueberries into the cookie dough, being careful not to crush them.
  8. Scoop a tablespoon of dough, flatten it slightly, and place a small amount of the cream cheese filling in the center. Top with another small scoop of dough and seal the edges to form a cookie.
  9. Place the cookies on a lined baking sheet and chill in the refrigerator for 30 minutes.
  10. Preheat the oven to 350°F (175°C) and bake for 12-15 minutes or until the edges are lightly golden.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For a chewy texture, try substituting dark brown sugar for granulated sugar.
