Description

Soft, moist, and bursting with fresh blueberries, this Blueberry Cream Cheese Bread features a creamy cheesecake-like swirl that makes it irresistible. Perfect for breakfast, brunch, or dessert, this easy quick bread is packed with flavor and texture.

Ingredients

For the Bread:

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/3 cup vegetable oil

2 large eggs

1 tsp vanilla extract

3/4 cup buttermilk

1 cup fresh or frozen blueberries (if frozen, do not thaw)

For the Cream Cheese Swirl:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 large egg

1/2 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. Prepare Cream Cheese Swirl: Beat cream cheese, sugar, egg, and vanilla until creamy; set aside.
  3. Mix Dry Ingredients: In a large bowl, combine flour, baking powder, baking soda, and salt.
  4. Combine Wet Ingredients: In another bowl, whisk sugars, oil, eggs, vanilla, and buttermilk. Add wet ingredients to dry ingredients, mixing until just combined.
  5. Add Blueberries: Gently fold blueberries into the batter.
  6. Layer Batter and Swirl: Pour half the batter into the loaf pan, spread cream cheese mixture evenly over, and top with the remaining batter.
  7. Bake: Bake for 55-65 minutes. Cover with foil during the last 10-15 minutes if browning too quickly. Check doneness with a toothpick.
  8. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and serve.

Notes

Use frozen blueberries directly from the freezer to prevent bleeding.

Substitute buttermilk with 3/4 cup milk and 1 tbsp vinegar or lemon juice, letting it sit for 5 minutes.

To prevent a dense texture, mix gently and avoid overmixing the batter.
