Ingredients
For the Crust:
1 and 1/2 cups Graham cracker crumbs
1/4 cup Granulated sugar
1/2 cup Unsalted butter, melted
For the Cheesecake Filling:
24 oz Cream cheese, softened
1 cup Granulated sugar
3 Large eggs
1 cup Sour cream
1/4 cup Bourbon
1 tsp Vanilla extract
For the Bourbon Caramel Sauce:
1 cup Granulated sugar
1/4 cup Water
1/2 cup Heavy cream
2 tbsp Bourbon
2 tbsp Unsalted butter
Pinch of salt
Instructions
- Preheat your oven to 325°F (160°C) and prepare a 9-inch springform pan.
- Make the crust by combining graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes.
- Prepare the cheesecake filling by beating cream cheese and sugar, then adding eggs, sour cream, bourbon, and vanilla.
- Pour filling over the cooled crust and bake in a water bath for 60-70 minutes.
- Make the bourbon caramel sauce by cooking sugar and water until amber, then whisking in cream, bourbon, butter, and salt.
- Once the cheesecake is chilled, pour the caramel sauce over the top.
