Ingredients
4 salmon fillets (about 6 oz each)
1/2 cup peach preserves or jam
2 tablespoons bourbon
1 tablespoon Dijon mustard
1 tablespoon soy sauce
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon grated fresh ginger (optional)
Salt and black pepper to taste
Fresh thyme or parsley, for garnish
Instructions
-
Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper or lightly grease it.
-
In a small saucepan over medium heat, combine peach preserves, bourbon, Dijon mustard, soy sauce, olive oil, garlic, and ginger (if using). Stir and simmer for 4-5 minutes until the glaze thickens slightly. Remove from heat.
-
Pat the salmon fillets dry and place them skin-side down in the prepared baking dish. Season with salt and pepper.
-
Spoon half of the bourbon peach glaze over the salmon, coating each fillet evenly.
-
Roast the salmon in the oven for 12-15 minutes or until the fish flakes easily with a fork. In the last 2-3 minutes of roasting, brush on the remaining glaze.
-
Garnish with fresh thyme or parsley before serving.
Notes
For a spicy kick, add a pinch of red pepper flakes or a dash of hot sauce to the glaze.
Substitute the salmon with trout or cod for a different texture.
If peach preserves are unavailable, apricot or mango jam can be used as a substitute.
