Description

This Bourbon Peach Roasted Salmon combines the sweetness of peach preserves and the smoky richness of bourbon for a Southern-inspired dish that’s perfect for any occasion. Ingredients

4 salmon fillets (about 6 oz each)

1/2 cup peach preserves or jam

2 tablespoons bourbon

1 tablespoon Dijon mustard

1 tablespoon soy sauce

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon grated fresh ginger (optional)

Salt and black pepper to taste

Fresh thyme or parsley, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper or lightly grease it.

  2. In a small saucepan over medium heat, combine peach preserves, bourbon, Dijon mustard, soy sauce, olive oil, garlic, and ginger (if using). Stir and simmer for 4-5 minutes until the glaze thickens slightly. Remove from heat.

  3. Pat the salmon fillets dry and place them skin-side down in the prepared baking dish. Season with salt and pepper.

  4. Spoon half of the bourbon peach glaze over the salmon, coating each fillet evenly.

  5. Roast the salmon in the oven for 12-15 minutes or until the fish flakes easily with a fork. In the last 2-3 minutes of roasting, brush on the remaining glaze.

  6. Garnish with fresh thyme or parsley before serving.

Notes

For a spicy kick, add a pinch of red pepper flakes or a dash of hot sauce to the glaze.

Substitute the salmon with trout or cod for a different texture.

If peach preserves are unavailable, apricot or mango jam can be used as a substitute.
