Ingredients

1 cup unsalted butter

1 1/2 cups heavy cream

1 1/2 cups whole milk

3/4 cup granulated sugar

5 large egg yolks

1 teaspoon vanilla extract

1/4 teaspoon salt


Instructions

  1. Brown the Butter: Melt butter over medium heat until golden brown and nutty-smelling. Cool.
  2. Heat the Cream and Milk: Simmer heavy cream and milk in a separate saucepan.
  3. Whisk Eggs and Sugar: Combine egg yolks and sugar until pale.
  4. Temper the Eggs: Slowly mix hot cream into egg mixture, whisking constantly.
  5. Cook the Custard: Return mixture to saucepan and cook over low heat until thickened, avoiding boiling.
  6. Combine and Chill: Strain custard into a bowl, mix in brown butter, vanilla, and salt. Chill in the refrigerator.
  7. Churn: Churn chilled mixture in an ice cream maker as per manufacturer’s instructions.
  8. Freeze: Transfer to a container and freeze until firm.

Notes

Ensure the brown butter is cooled before mixing to avoid curdling.

Strain the custard to remove lumps for a smooth texture.

If you don’t have an ice cream maker, freeze and stir every 30 minutes.
