Instructions

  1. Prepare the Crust: Preheat your oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into a greased 9-inch springform pan. Bake for 10 minutes and let cool.
  2. Prepare the Cheesecake: In a large bowl, beat softened cream cheese and brown sugar until smooth. Add eggs one at a time, followed by sour cream, vanilla extract, and heavy cream. Pour the batter over the cooled crust and smooth the top. Bake for 60-70 minutes until the center is set but still jiggly. Let it cool, then refrigerate for at least 4 hours or overnight.
  3. Prepare the Pecan Topping: In a saucepan, melt butter over medium heat. Stir in brown sugar and heavy cream, cooking until bubbly (about 2-3 minutes). Add pecans and vanilla extract, stirring to coat. Let cool slightly.
