Ingredients

1 pound ground beef

1 medium onion, chopped

3 cups cabbage, chopped

1 can (14.5 oz) diced tomatoes, undrained

1 cup cooked rice

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese

1/2 cup beef broth


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large skillet, brown the ground beef with the chopped onion over medium heat until the beef is fully cooked. Drain the excess fat.
  3. Stir in the garlic powder, salt, and black pepper to season the beef mixture.
  4. Layer half of the chopped cabbage in the bottom of the greased baking dish.
  5. Add the cooked beef mixture on top of the cabbage, then sprinkle the rice evenly over the beef.
  6. Pour the undrained diced tomatoes over the rice, spreading it out evenly.
  7. Top with the remaining cabbage and pour the beef broth over the entire dish.
  8. Cover the baking dish with foil and bake for 45 minutes.
  9. Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake uncovered for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

Notes

Feel free to add extra vegetables like carrots, bell peppers, or mushrooms to the beef mixture for extra nutrition.

For a spicy twist, add red pepper flakes or diced jalapeños along with the garlic powder.
