Ingredients

cabbage, shredded

¼ tsp salt (plus extra for cucumbers)

12 cucumbers, sliced

½ onion, thinly sliced

red cabbage, shredded

1 carrot, shredded

20g walnuts, chopped

2 garlic cloves, minced

2 tbsp olive oil

1 tbsp honey

2 tbsp mustard

1 tsp soy sauce

1 tsp rice vinegar


Instructions

  1. In a large bowl, toss the shredded cabbage and sliced cucumbers with ¼ teaspoon of salt. Let sit for 5 minutes to soften.
  2. Add the thinly sliced onion, shredded red cabbage, shredded carrot, and chopped walnuts to the bowl.
  3. In a separate small bowl, mix the minced garlic, olive oil, honey, mustard, soy sauce, and rice vinegar until well combined.
  4. Drizzle the dressing over the salad, toss to combine, and serve immediately.

Notes

For best results, dress the salad just before serving to keep the vegetables crisp.
