Ingredients
1 tablespoon olive oil
1 lb ground beef
1 onion, chopped
2 cloves garlic, minced
1 (15 oz) can diced tomatoes
1 (6 oz) can tomato paste
4 cups beef broth
1 cup water
1 cup cooked rice
2 cups cabbage, chopped
1 teaspoon dried basil
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
Salt and pepper, to taste
1 tablespoon brown sugar (optional, for sweetness)
Fresh parsley (optional, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
- Add chopped onion and garlic to the pot, cooking until softened, 3-4 minutes.
- Stir in diced tomatoes, tomato paste, beef broth, water, cooked rice, cabbage, basil, thyme, paprika, salt, and pepper. Bring to a boil.
- Reduce heat to low and simmer for 30-40 minutes, or until the cabbage is tender and flavors are well combined.
- If desired, stir in brown sugar to balance the acidity.
- Remove from heat, adjust seasonings, and serve hot, garnished with parsley if desired.
