Description

A hearty cabbage soup with hamburger packed with ground beef, fresh vegetables, and herbs. Perfect for chilly days, this easy slow-cooked recipe is wholesome, flavorful, and ideal for meal prep.

Ingredients

23 pounds hamburger (or ground turkey)

1 head of cabbage, chopped

2 cups celery, diced

2 cups white or yellow onion, diced

1 green bell pepper, diced

23 cloves garlic, minced

56 cups beef broth

2 (14 oz) cans diced tomatoes with basil, oregano, and garlic

2 teaspoons oregano

2 teaspoons basil

½ teaspoon red pepper flakes

Black pepper to taste

½ teaspoon salt (optional)

Instructions

  1. Brown Meat: Cook the hamburger in a skillet over medium heat, breaking it apart as it cooks. Drain any excess grease.
  2. Combine Ingredients: Add cooked hamburger, cabbage, celery, onion, bell pepper, and garlic to a crock pot.
  3. Add Liquids and Seasonings: Pour in beef broth and diced tomatoes with juices. Sprinkle in oregano, basil, red pepper flakes, black pepper, and optional salt. Stir well.
  4. Cook: Set the slow cooker to high for 5-6 hours or low for 6-8 hours. Stir occasionally.
  5. Serve: Once vegetables are tender and flavors are well combined, serve hot and enjoy!

Notes

Swap ground beef with turkey or plant-based meat for a lighter or vegetarian option.

Customize with extra vegetables like carrots or zucchini.

Add a spicy kick with more red pepper flakes or hot sauce.
