Ingredients
For the Dough:
2 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon sugar
1/2 cup unsalted butter, cold and cubed
1/4 cup cold water
For the Filling:
3 medium apples, peeled, cored, and diced
1/4 cup brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
1 tablespoon cornstarch
1/4 cup caramel sauce
For Assembly:
1 egg (for egg wash)
Extra sugar for sprinkling
Instructions
- In a large bowl, whisk together the flour, salt, and sugar. Add the cold butter and mix until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- In a saucepan over medium heat, combine diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook until apples soften. Stir in cornstarch and cook until thickened. Remove from heat and mix in caramel sauce. Let cool.
- Preheat oven to 375°F (190°C). Roll out chilled dough to 1/8-inch thickness. Cut into 4-5 inch circles.
- Place 1-2 tablespoons of filling in the center of each circle. Fold over and seal edges with a fork. Place on a baking sheet.
- Brush with egg wash and sprinkle with sugar. Bake for 20-25 minutes or until golden brown. Let cool slightly before serving.
Notes
For the best texture, serve warm.
You can freeze uncooked empanadas for later baking. Just bake from frozen, adding a few extra minutes to the cooking time.
