Ingredients

For the Cake:

2 ½ cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground allspice

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

½ cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup applesauce

2 cups peeled and chopped apples (Granny Smith recommended)

For the Caramel Glaze:

½ cup unsalted butter

1 cup brown sugar, packed

¼ cup heavy cream

1 teaspoon vanilla extract

Pinch of salt


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. Prepare the Cake Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt. In a large bowl, cream the butter and sugars until light and fluffy. Add eggs one at a time, followed by vanilla extract and applesauce. Gradually mix in dry ingredients, then fold in chopped apples.
  3. Bake: Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  4. Prepare Caramel Glaze: In a saucepan, melt butter over medium heat. Add brown sugar and heavy cream, bringing the mixture to a boil for 2 minutes. Remove from heat and stir in vanilla and salt.
  5. Glaze the Cake: Once the cake has cooled, pour the warm caramel glaze over the top and allow it to set for 10-15 minutes before serving.

Notes

For the best results, use tart apples like Granny Smith to balance the sweetness of the glaze.

Make sure to cool the cake completely before pouring the caramel glaze to prevent the glaze from soaking in too much.
