Ingredients

1 cup grated carrots

1 cup grated zucchini

1 cup grated apple (peeled)

2 cups all-purpose flour

1 1/2 teaspoons baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup vegetable oil

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

  2. In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

  3. In a separate bowl, whisk together the oil, sugar, eggs, and vanilla extract.

  4. Add the grated carrots, zucchini, and apple to the wet ingredients, stirring to combine.

  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped walnuts if using.

  6. Pour the batter into the prepared loaf pan and spread it evenly.

  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

You can switch up the flavor by adding dried fruits like raisins or cranberries.

Whole wheat flour can be used for a more wholesome version, and you can swap granulated sugar for honey or maple syrup for a healthier alternative.

For a more spiced flavor, add ground cloves or ginger to the batter.
