Ingredients

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 cup grated carrots

1 cup old-fashioned oats

1/2 cup chopped walnuts (optional)

1/2 cup raisins (optional)

For the Cream Cheese Frosting:

4 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 cup powdered sugar

1/2 teaspoon vanilla extract


Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. Mix Wet Ingredients: In a separate bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla, and mix until combined.
  4. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated carrots, oats, walnuts, and raisins (if using).
  5. Bake: Scoop the dough onto the prepared baking sheet and bake for 12-14 minutes, or until the edges are golden. Let cool completely before frosting.
  6. Make the Frosting: Beat together the cream cheese, butter, powdered sugar, and vanilla until smooth.

Notes

For a nut-free option, omit the walnuts.
