Ingredients
2 medium carrots, grated (150 g)
12 medium dates, pitted (120 g)
1 cup walnut halves (110 g)
½ cup almonds (80 g)
⅓ cup desiccated coconut (40 g)
1 tsp cinnamon powder
1 pinch salt

Instructions
- In a food processor, combine grated carrots, dates, walnuts, almonds, desiccated coconut, cinnamon, and salt.
- Process until a sticky dough forms. If it’s too dry, add a teaspoon of water at a time.
- Roll the mixture into 1-inch balls using your hands.
- Coat each ball in extra desiccated coconut for added texture.
- Place on a tray lined with parchment paper and refrigerate for 30 minutes to firm up.
