Ingredients

1 lb ground beef

1 small onion, diced

3 cloves garlic, minced

4 cups potatoes, peeled and diced

4 cups beef broth

1 cup milk

1 cup heavy cream

2 cups shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1 teaspoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/2 teaspoon dried thyme

1 tablespoon butter

2 tablespoons all-purpose flour

2 green onions, chopped (for garnish)


Instructions

  1. In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess grease.
  2. Add diced onion and minced garlic; cook for 2-3 minutes until fragrant.
  3. Stir in butter until melted, then sprinkle in flour. Cook for 1 minute, stirring constantly.
  4. Slowly pour in beef broth while stirring, then add diced potatoes.
  5. Season with salt, black pepper, smoked paprika, Worcestershire sauce, and dried thyme.
  6. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  7. Stir in milk and heavy cream, then gradually add shredded cheeses, stirring until melted and smooth.
  8. Simmer for another 5 minutes, adjusting seasoning as needed.
  9. Serve hot, garnished with chopped green onions.

Notes

For a spicier version, add jalapeños or a pinch of cayenne.
