Ingredients
1 lb ground beef

1 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon dried thyme
1 tablespoon butter
2 tablespoons all-purpose flour
2 green onions, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess grease.
- Add diced onion and minced garlic; cook for 2-3 minutes until fragrant.
- Stir in butter until melted, then sprinkle in flour. Cook for 1 minute, stirring constantly.
- Slowly pour in beef broth while stirring, then add diced potatoes.
- Season with salt, black pepper, smoked paprika, Worcestershire sauce, and dried thyme.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Stir in milk and heavy cream, then gradually add shredded cheeses, stirring until melted and smooth.
- Simmer for another 5 minutes, adjusting seasoning as needed.
- Serve hot, garnished with chopped green onions.
