Description

Ingredients

2 cups cold mashed potatoes (best if slightly firm)

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 large eggs

1/4 cup sour cream or Greek yogurt

2 tablespoons chopped chives or green onions

Salt and pepper, to taste

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Nonstick cooking spray or olive oil for greasing the muffin tin


Instructions

  1. Preheat the oven to 400°F (200°C). Grease a mini muffin tin with nonstick spray or olive oil.
  2. In a large bowl, combine the cold mashed potatoes, shredded cheddar cheese, Parmesan cheese, eggs, sour cream (or Greek yogurt), chopped chives, salt, pepper, garlic powder, and onion powder. Stir until fully combined and smooth.
  3. Spoon the mixture into the muffin cups, filling each cup to the top. Press lightly to ensure they hold their shape.
  4. Bake for 20-25 minutes, or until the tops are golden and crispy around the edges.
  5. Let cool for a few minutes, then remove from the tin. Serve warm, optionally garnished with extra chives or sour cream.

Notes

Leftover mashed potatoes work great for this recipe, as long as they are firm and not too creamy.

For added flavor, experiment with different cheeses or herbs like parsley or basil.

You can make these puffs ahead of time by preparing the mixture and storing it in the fridge, or freezing the baked puffs for later.
