Description

This Chicken Cobbler with Red Lobster Biscuit Mix is the ultimate comfort food, featuring creamy chicken and vegetables topped with a cheesy, buttery biscuit crust. Perfect for a cozy dinner or potluck, this easy-to-make dish is a delicious way to use up leftover chicken.

Ingredients

2 cups cooked chicken, shredded

1 cup frozen mixed vegetables (peas, carrots, corn)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1 package Red Lobster Cheddar Bay Biscuit Mix

1/2 cup shredded cheddar cheese

3/4 cup milk

1/4 cup butter, melted

Instructions

  1. Preheat & Prep: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Layer the Chicken & Veggies: Spread the shredded chicken evenly in the bottom of the dish, then add the frozen mixed vegetables on top.
  3. Make the Sauce: In a bowl, whisk together the cream of chicken soup, chicken broth, garlic powder, onion powder, black pepper, and salt. Pour over the chicken and vegetables without stirring.
  4. Prepare the Biscuit Mix: In a separate bowl, combine the Red Lobster biscuit mix, shredded cheddar cheese, and milk. Stir until just combined.
  5. Assemble: Drop spoonfuls of the biscuit batter evenly over the chicken mixture. Drizzle the melted butter over the biscuit topping.
  6. Bake: Place in the oven and bake for 35-40 minutes, or until the biscuit topping is golden brown and fully cooked.
  7. Cool & Serve: Let it cool for a few minutes before serving. Enjoy!

Notes

Storage: Refrigerate leftovers in an airtight container for up to 3 days or freeze for up to 3 months.

Reheating: Warm in a 350°F oven for 15 minutes or microwave individual portions for 1-2 minutes.

Variations: Try adding bacon, swapping in different vegetables, using turkey instead of chicken, or making it spicier with cayenne pepper.

Make Ahead: Assemble everything except the biscuit topping and refrigerate. Add the biscuit mix before baking.
