12 oz fettuccine pasta

Water and salt for boiling

For the Alfredo Sauce:

3 tbsp unsalted butter

3 cloves garlic, minced

1 1/2 cups heavy cream

1 cup freshly grated Parmesan cheese

1/2 cup shredded mozzarella cheese

Salt and pepper, to taste

1/4 tsp nutmeg (optional)

Fresh parsley, chopped, for garnish


Instructions

  1. Cook the Chicken:
    • Pat chicken dry. Season with garlic powder, Italian seasoning, salt, and pepper.
    • Heat olive oil in a skillet over medium heat and cook chicken for 4-5 minutes per side until golden and fully cooked.
    • Rest for 5 minutes, then slice into strips.
  2. Cook the Pasta:
    • Boil a large pot of salted water. Cook fettuccine until al dente.
    • Reserve 1/2 cup pasta water, then drain.
  3. Make the Alfredo Sauce:
    • Melt butter in the same skillet over medium heat. Sauté garlic for 1 minute.
    • Stir in heavy cream, simmering gently for 3-4 minutes.
    • Gradually mix in Parmesan and mozzarella until melted. Adjust with reserved pasta water for consistency.
  4. Combine Everything:
    • Toss cooked fettuccine in the sauce. Mix in sliced chicken.
  5. Serve:
    • Plate pasta, garnish with parsley, and serve warm.

Use freshly grated Parmesan for the best results.

Adjust sauce thickness by adding pasta water gradually.
