Ingredients

1 pound ground chicken

1/2 cup grated Parmesan cheese

1 tablespoon lemon zest

2 tablespoons capers, chopped

2 garlic cloves, minced

2 eggs, beaten

1/2 cup breadcrumbs

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

1 cup chicken broth

2 tablespoons butter

1/4 cup fresh lemon juice

Fresh parsley, chopped (for garnish)


Instructions

  1. In a large bowl, combine ground chicken, Parmesan cheese, lemon zest, capers, garlic, eggs, breadcrumbs, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1-2 inches in diameter.

For a gluten-free version, use gluten-free breadcrumbs.

Ground turkey can be used as a substitute for ground chicken.
