2 tablespoons olive oil
1 cup chicken broth
2 tablespoons butter
1/4 cup fresh lemon juice

Instructions
- In a large bowl, combine ground chicken, Parmesan cheese, lemon zest, capers, garlic, eggs, breadcrumbs, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1-2 inches in diameter.
