Description

Ingredients

12 oz spaghetti

3 cups cooked, shredded chicken

2 cups chicken broth

1 cup heavy cream

1 cup sour cream

1/2 cup grated Parmesan cheese

1/4 cup all-purpose flour

1/2 cup butter

1 small onion, finely chopped

2 cloves garlic, minced

1 cup mushrooms, sliced

1 cup shredded mozzarella cheese

1/4 teaspoon ground nutmeg

Salt and pepper to taste

1/4 cup chopped parsley (optional for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, melt the butter. Add the chopped onion and minced garlic, and cook until the onion is soft and translucent.
  4. Stir in the sliced mushrooms and cook until tender.
  5. Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
  6. Gradually whisk in the chicken broth and heavy cream. Continue to cook, stirring constantly, until the sauce thickens.
  7. Remove the skillet from heat. Stir in the sour cream, grated Parmesan cheese, ground nutmeg, and season with salt and pepper.
  8. Add the cooked, shredded chicken and cooked spaghetti to the sauce, and stir until everything is well combined.
  9. Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the shredded mozzarella cheese evenly over the top.
  10. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
  11. Let the casserole cool for a few minutes before serving. Garnish with chopped parsley if desired.

Notes

Use rotisserie chicken for a quick and easy option.

For extra flavor, add a splash of white wine to the sauce after cooking the vegetables.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
