Ingredients

8 oz cream cheese, softened

¼ cup granulated sugar

1 large egg

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  2. Prepare the Cookie Dough: In a medium bowl, whisk together the flour, baking soda, and salt. In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, and beat until combined. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chocolate chips.
  3. Make the Cheesecake Filling: In a separate bowl, beat the softened cream cheese, granulated sugar, egg, and vanilla extract until smooth.
  4. Assemble the Bars: Press half of the cookie dough mixture evenly into the bottom of the prepared baking dish. Spread the cheesecake filling over the cookie dough layer. Crumble the remaining cookie dough over the top of the cheesecake layer.
