Ingredients

1/2 cup peanut butter

3 tablespoons soft butter

1 teaspoon vanilla extract

1 cup Rice Krispies cereal

1/2 cup powdered sugar

1 teaspoon coconut oil (optional, for smoother coating)


Instructions

  1. In a medium bowl, mix peanut butter, soft butter, vanilla extract, and powdered sugar until smooth.
  2. Fold in Rice Krispies cereal gently to keep them intact.
  3. Scoop tablespoon-sized portions, roll into balls, and place on a parchment-lined baking sheet.
  4. Chill in the refrigerator for 30 minutes until firm.
  5. Melt chocolate chips and optional coconut oil in a microwave-safe bowl in 20-second intervals, stirring until smooth.
