These bars are perfect for any occasion, offering a sweet and indulgent dessert with a crunchy texture and creamy center. Perfect for dessert lovers who enjoy a churro-inspired treat with the smoothness of cheesecake!

Ingredients

Crust:

1 cup graham cracker crumbs

4 tbsp melted butter

1/4 cup sugar

1 tsp cinnamon

Cheesecake Filling:

16 oz cream cheese, softened

1 cup sugar

1 tsp vanilla extract

2 large eggs

Cinnamon Sugar Topping:

1/4 cup sugar

2 tsp cinnamon

Instructions

  1. Prepare the Crust: Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Press the mixture into the bottom of a baking dish to form an even crust layer.
  2. Make the Cheesecake Filling: In a separate bowl, beat cream cheese and sugar until smooth. Add vanilla extract and eggs, mixing until the mixture is creamy and well combined.
  3. Assemble the Bars: Pour the cheesecake filling over the crust and spread evenly. Sprinkle the cinnamon-sugar topping over the cheesecake layer.
  4. Bake: Bake for 25-30 minutes or until the cheesecake layer is set. Allow to cool, then refrigerate for at least 2 hours to fully set.
  5. Serve: Slice into bars and enjoy the combination of creamy cheesecake and crunchy cinnamon sugar topping.

Notes

Make sure the cream cheese is softened for a smooth filling.

Refrigerating for at least 2 hours allows the cheesecake to set properly.

For a spicier version, add a pinch of cayenne pepper to the cinnamon-sugar topping for a sweet and spicy kick.
