Ingredients
2 cups grated fresh coconut (or unsweetened shredded coconut)
1 1/2 cups brown sugar
1/4 cup water
1 teaspoon grated fresh ginger
1/2 teaspoon vanilla extract

Instructions
- In a large saucepan, combine the grated coconut, brown sugar, and water. Stir over medium heat until the sugar dissolves.
- Add the grated ginger and a pinch of salt. Stir continuously as the mixture thickens and begins to pull away from the sides of the pan, about 8-10 minutes.
- Remove from heat and stir in the vanilla extract.
- Drop spoonfuls of the coconut mixture onto a parchment-lined baking sheet, shaping them into small mounds.
- Allow the coconut drops to cool and harden completely before serving.
Notes
For best results, use freshly grated coconut, but unsweetened shredded coconut can be a convenient substitute.
