Ingredients

2 cups grated fresh coconut (or unsweetened shredded coconut)

1 1/2 cups brown sugar

1/4 cup water

1 teaspoon grated fresh ginger

1/2 teaspoon vanilla extract

Pinch of salt


Instructions

  1. In a large saucepan, combine the grated coconut, brown sugar, and water. Stir over medium heat until the sugar dissolves.
  2. Add the grated ginger and a pinch of salt. Stir continuously as the mixture thickens and begins to pull away from the sides of the pan, about 8-10 minutes.
  3. Remove from heat and stir in the vanilla extract.
  4. Drop spoonfuls of the coconut mixture onto a parchment-lined baking sheet, shaping them into small mounds.
  5. Allow the coconut drops to cool and harden completely before serving.

Notes

For best results, use freshly grated coconut, but unsweetened shredded coconut can be a convenient substitute.

Store in an airtight container to maintain freshness; they can be refrigerated for up to two weeks or frozen for up to three months.
