Ingredients
For the Cornbread Waffle Bites:
1 cup cornbread mix
1/2 cup buttermilk
1 large egg
1/4 cup shredded cheddar cheese (optional)
1/4 cup cooked and crumbled bacon (optional)
For the Honey Butter Syrup:
1/4 cup honey
2 tbsp unsalted butter
1 tbsp maple syrup (optional)
Pinch of salt
Instructions
- Prepare the Waffle Batter: In a mixing bowl, combine the cornbread mix, buttermilk, and egg until smooth. Fold in cheddar cheese and bacon, if desired.
- Cook the Waffle Bites: Preheat a mini waffle maker and lightly grease it. Add about 1 tablespoon of batter per section and cook for 3-4 minutes until golden brown. Repeat with remaining batter.
- Make the Honey Butter Syrup: In a small saucepan over low heat, combine honey, butter, and optional maple syrup with a pinch of salt. Stir until smooth and remove from heat.
- Serve: Arrange waffle bites on a platter and drizzle with warm honey butter syrup. Serve immediately.
Notes
For extra flavor, add diced jalapeños or a dash of cinnamon to the batter.
