Ingredients
1 cup mashed ripe bananas (about 2–3 bananas)
1 cup cottage cheese
2 large eggs
1/2 cup honey or maple syrup
1 teaspoon vanilla extract
2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup chopped walnuts or pecans (optional)
1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Mash the ripe bananas in a large bowl until smooth.
- Add cottage cheese, eggs, honey or maple syrup, and vanilla extract to the mashed bananas. Mix well.
- In a separate bowl, whisk together whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
- Fold in chopped nuts and chocolate chips, if using.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.
Notes
For a lighter texture, you can substitute whole wheat flour with all-purpose flour.
