1 cup mashed ripe bananas (about 23 bananas)

1 cup cottage cheese

2 large eggs

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups whole wheat flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 cup chopped walnuts or pecans (optional)

1/4 cup chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Add cottage cheese, eggs, honey or maple syrup, and vanilla extract to the mashed bananas. Mix well.
  4. In a separate bowl, whisk together whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  6. Fold in chopped nuts and chocolate chips, if using.
