Description

Cowboy Cookies are hearty and flavorful treats filled with oats, chocolate chips, pecans, and coconut. These chewy cookies offer the perfect balance of sweetness and crunch, making them a crowd-pleasing dessert ideal for sharing. Enjoy them fresh from the oven or store for later indulgence!


Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon ground cinnamon

½ teaspoon salt

1 cup unsalted butter, softened

¾ cup granulated sugar

¾ cup light brown sugar

2 large eggs, at room temperature

1 teaspoon vanilla extract

1½ cups old-fashioned rolled oats

1½ cups semi-sweet chocolate chips

¾ cup chopped pecans

1 cup shredded coconut (optional but recommended)


Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.
  3. Cream butter and both sugars with a mixer until light and fluffy, about 3 minutes.
  4. Add eggs one at a time, mixing just until combined. Stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until well combined.
  6. Stir in oats, chocolate chips, pecans, and shredded coconut.
  7. Drop dough by rounded tablespoons onto prepared baking sheets, spacing them 2 inches apart.
  8. Bake for 9–11 minutes, or until lightly browned. Let cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra nutty flavor, toast the pecans before chopping.

You can substitute the pecans with walnuts or almonds, or skip the nuts entirely for a nut-free version.

The dough can be refrigerated for up to 48 hours before baking.

If desired, you can freeze the dough for up to 3 months. Bake from frozen, adding a few extra minutes to the baking time.
