Ingredients

4 ounces cream cheese, softened

2 1/4 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt


Instructions

  1. Cream the butter, cream cheese, and sugar together until light and fluffy using an electric mixer.
  2. Beat in the egg, vanilla extract, and almond extract (if using) until fully incorporated.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually mix the dry ingredients into the wet mixture until a dough forms.
  5. Divide dough into two discs, wrap in plastic wrap, and chill for at least 1 hour.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out dough to 1/4-inch thickness on a floured surface. Use cookie cutters to create desired shapes.
  8. Place cookies 1 inch apart on prepared baking sheets.
  9. Bake for 8-10 minutes until edges begin to turn golden.
