4 cloves garlic, minced
2 tablespoons Cajun seasoning, divided
5 cups chicken stock (or 4 cups stock + 1 cup water)
1 can (14.5 oz) diced tomatoes, undrained
1 cup heavy cream
1 cup ditalini or other small pasta, dry
1 pound chicken breasts or tenders, thinly sliced
1 tablespoon neutral oil
1 cup freshly grated Parmesan
Salt and freshly ground black pepper to taste
Green onions, sliced for garnish
Instructions
- Sauté Aromatics: Heat butter in a large pot over medium-high heat. Sauté onion and garlic for about 5 minutes, then stir in 1 tablespoon Cajun seasoning.
- Prepare Broth: Remove from heat and stir in chicken stock, diced tomatoes, and heavy cream. Return to heat, bring to a boil, then reduce to a simmer.
- Cook Pasta: Add dry pasta to the pot, cooking for about 10 minutes while stirring regularly.
- Cook Chicken: Season chicken with remaining Cajun seasoning. Cook in a skillet with oil over medium heat for 3-5 minutes per side. Chop into bite-sized pieces.
- Finish Soup: Reduce heat to low, stir in Parmesan, and add chicken pieces. Simmer for 2-3 minutes, then adjust seasoning with salt and pepper. Garnish with green onions and serve.
Notes
Adjust the spiciness by varying the amount of Cajun seasoning used.
For a creamier soup, use full-fat heavy cream or add extra Parmesan cheese.
