Ingredients
For the Meatballs:
1 lb lean ground chicken
1/2 cup Italian breadcrumbs
1/4 cup milk
1 egg
1/4 tsp salt
1/4 tsp pepper
2 tsp garlic powder
1/3 cup grated Parmesan cheese
For the Alfredo Sauce:
1/4 cup butter
3 tbsp minced garlic
3 cups heavy cream
2 tbsp Italian seasoning
1/4 tsp salt
1/4 tsp pepper
2/3 cup grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together ground chicken, breadcrumbs, milk, egg, salt, pepper, garlic powder, and Parmesan cheese.
- Form the mixture into meatballs and place them on the baking sheet.
- Bake for 18-20 minutes until golden brown and cooked through.
- In a skillet, melt butter over medium heat and sauté garlic for 1-2 minutes.
- Stir in heavy cream, Italian seasoning, salt, and pepper. Simmer for 5-7 minutes until slightly thickened.
- Remove from heat and stir in Parmesan cheese until smooth. Add meatballs to the sauce and toss to coat.
Notes
For a lighter version, consider using half-and-half instead of heavy cream.
These meatballs can be frozen for up to 3 months; reheat gently.
