Description

Ingredients

For the Meatballs:

1 lb lean ground chicken

1/2 cup Italian breadcrumbs

1/4 cup milk

1 egg

1/4 tsp salt

1/4 tsp pepper

2 tsp garlic powder

1/3 cup grated Parmesan cheese

For the Alfredo Sauce:

1/4 cup butter

3 tbsp minced garlic

3 cups heavy cream

2 tbsp Italian seasoning

1/4 tsp salt

1/4 tsp pepper

2/3 cup grated Parmesan cheese


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together ground chicken, breadcrumbs, milk, egg, salt, pepper, garlic powder, and Parmesan cheese.
  3. Form the mixture into meatballs and place them on the baking sheet.
  4. Bake for 18-20 minutes until golden brown and cooked through.
  5. In a skillet, melt butter over medium heat and sauté garlic for 1-2 minutes.
  6. Stir in heavy cream, Italian seasoning, salt, and pepper. Simmer for 5-7 minutes until slightly thickened.
  7. Remove from heat and stir in Parmesan cheese until smooth. Add meatballs to the sauce and toss to coat.

Notes

For a lighter version, consider using half-and-half instead of heavy cream.

These meatballs can be frozen for up to 3 months; reheat gently.
