Ingredients

2 chicken breasts, boneless and skinless

8 oz pasta (penne, fettuccine, or spaghetti)

1 tablespoon olive oil

1 cup mushrooms, sliced

2 cloves garlic, minced

1/2 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper and cook for 5-7 minutes on each side, until golden brown and fully cooked. Remove from the pan, let rest, then slice thinly.
  3. In the same skillet, add the sliced mushrooms and minced garlic, cooking for 3-4 minutes until the mushrooms are tender and golden.
  4. Pour in chicken broth, bring to a simmer, and scrape the browned bits off the pan for extra flavor.
  5. Stir in the heavy cream and Parmesan cheese, allowing the sauce to thicken over 2-3 minutes.
  6. Add the cooked pasta and sliced chicken to the skillet, tossing until everything is evenly coated in the creamy sauce.
  7. Season with additional salt and pepper to taste, then garnish with fresh parsley if desired.

Notes

For a vegetarian version, omit the chicken and add extra mushrooms or other vegetables like spinach or zucchini.

Add red pepper flakes for a spicy kick.

For extra cheesiness, include more Parmesan or mozzarella in the sauce.
