Ingredients

8 oz (225g) penne pasta

2 tablespoons olive oil

2 boneless, skinless chicken breasts, diced

Salt and pepper to taste

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1/2 cup sun-dried tomatoes, chopped

2 cups fresh spinach, chopped

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the penne pasta according to the package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season the diced chicken breasts with salt and pepper. Add to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  3. In the same skillet, add minced garlic and red pepper flakes. Sauté for 1 minute until fragrant.
  4. Add sun-dried tomatoes and spinach. Cook for 2-3 minutes until spinach is wilted.
  5. Pour in heavy cream and chicken broth. Stir and bring to a simmer.
  6. Stir in Parmesan cheese and Italian seasoning. Add the cooked chicken back to the skillet and let the sauce simmer for 2-3 minutes until thickened.
  7. Toss in the cooked pasta and coat evenly with the sauce. Cook for 1-2 minutes until heated through.
  8. Serve garnished with fresh parsley and additional Parmesan cheese if desired.

Notes

For a spicier kick, add more red pepper flakes or hot sauce.

Substitute penne pasta with your favorite type if preferred.
