Ingredients
2 tablespoons unsalted butter
3 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup whole milk
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Salt and pepper to taste
Instructions
- In a medium saucepan, melt butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
- Whisk in flour and cook for 1 minute, stirring constantly.
- Gradually add milk and heavy cream, whisking continuously to prevent lumps. Bring to a gentle simmer.
- Stir in Parmesan cheese, oregano, basil, salt, and pepper. Cook for 2-3 minutes until thickened.
- Remove from heat, let cool slightly, and use as desired. Store any leftovers in an airtight container.
Notes
For extra cheesiness, mix in shredded mozzarella.
To make it dairy-free, swap butter for olive oil and use almond or oat milk.
For a spicier version, add a pinch of red pepper flakes.
Store in the fridge for up to 5 days or freeze for 2 months.
